These light sprouted oat pumpkin muffins have all the cozy fall spices, pumpkin, and rustic taste of sprouted oats. Using our organic sprouted oat flour gives each muffin a soft texture while enhancing digestibility and flavour. Paired with a crumble topping with chocolate chips adds just the right amount of sweetness and crunch, making these muffins perfect for an autumn breakfast or a comforting afternoon snack.

220 g oat flour

¾ c sugar

1 tsp cinnamon

1 tsp baking soda

½ c oil

⅓ c water

½ tsp vanilla

1 c pumpkin

2 eggs

½ c chocolate chips

¾ c rolled oats

¼ c rye
-
¾ c brown sugar

¼ oat flour
-
⅓ c melted butter
-
¼ c coco powder
Crumble Topping
Directions
Mix together flours, sugar, soda, spices in a bowl. Add in eggs and oil. Mix well.
Add in pumpkin. Mix gently together.
Add in chocolate chips.
Spoon batter into lined muffin tins. Top with the crumble.
Mix together the dry crumble ingredients as listed.
Add in melted butter .
Sprinkle on top of the muffins. Then bake at 350 for 10-15 mins
Let them cool.
