Chocolate and peppermint come together in these festive Christmas cookies, filled with melty chocolate chips and a fresh peppermint. Made with our organic sprouted flour, they are soft, chewy and have a peppermint crunch. Perfect to make in the month of December.
Ingredients

½ c unsalted butter melted

2 tbsp coconut oil

¾ c reg sugar

¼ c brown sugar
-
½c dark chocolate cocoa poweder

1 tbsp dark coffee
-
1 large egg
-
1 c sprouted wheat flour ( may also use oat flour)

¼ c reg flour
-
1 ½ tbs vanilla
-
½ tsp baking powder
-
½ chocolate chipes
-
2 candy canes crushed

½ tsp salt
Directions
Mix together melted butter, oil, sugars and cocoa powder.
Add in egg, vanilla and coffee.
Add in flour mixtures, baking powder and salt. Do not over mix. Mix until just combined.
Stir in chocolate chips. Fold gently in.
Scoop 2 tbsp size dough onto a cookie tray.
Roll cookie in crushed candy cane.
Bake at 350 for 10 mins
Drizzle with extra melted dark chocolate.
