These sprouted kamut bagels, they have a soft, chewy interior, chewy outsidet, and a delicious cinnamon and raisin taste. Kamut flour has a naturally buttery flavor, making it a excellent choice for using in these cinnamon raisin bagels.
Ingredients

1 ½ cups warm water

2 ¾ tsp instant yeast

3 cups reg all purpose flour

1 c. sprouted kamut flour

1 Tablespoon brown sugar
-
2 tsp salt
-
1 tsp pure vanilla extract
-
¾ cup raisin
-
3 tablespoon granulated sugar
-
1 tsp ground cinnamon
-
bowl, olive oil for greasing bowl
-
2 quarts water
-
¼ cup honey
-
1 egg white beaten with 1 tablespoon water
Directions
Combine warm water and yeast together in a mixing bowl. Let it rest for about 5 min.
Add in your flour, brown sugar, raisins, salt and vanilla extract. Mix together with either a dough hook or a spoon. Dough will be stiff.
Mix sugar and cinnamon together. Sprinkle it on the surface you will knead dough on. Knead and roll the dough for about 5 mins. Picking up as much cinnamon sugar mixture as possible. It may become a bit sticky and that is totally ok.
Your dough should look like this when you are done kneading. Place dough in a lightly greased bowl. Cover and let rise for about 1 hour to 1.5 hours. It will double in size. Place on a warm spot to rise.
Fill a large pan up with 2 quarts water and whisk in honey. Bring to a boil. Drop in bagels for 2 or 4 depending on the room you have in your pan. Boil for 1 min.
Shaping your bagels. Once they have risen turn out the dough. Divide into 8 pieces and roll each piece into a ball. Let them rise will you make the water mixture that is mentioned in the step above.
Roll each bagel into a log form .
Create a circle shape with the dough.
Boil your bagel in the water/honey mixture for 1 min for each bagel.
Brush with egg white and water mixture. ( 1 egg white + 1 tbsp water)
Place bagels on a line cookie sheet. Bake for 20-25 mins at 425 Fahrenheit.
Allow to cool.
