Soft, nutty flavored muffin.
Ingredients

2 eggs

1 c. sugar

⅔ oil
-
1 tsp vanilla
-
1 c. flour
-
¼ c. flax
-
1c. oat flour
-
½ tsp salt
-
½ tsp baking soda
1 tsp baking powder

1 c. sour cream
-
1 c. fresh blueberry
Directions
Beat together oil, eggs and sugar
Add in dry ingredients
Fold in sour cream and fresh blueberries
Spoon into muffin tin.
Add Crumble on top
Crumble:
¾ c. rolled oats1.
1/2. flour2.
¼ c oat flour3.
⅓ c melted butter4.
¼ c sprouted rye5.
¾ c brown sugar.6.
Mix ingredients together and sprinkle on top on
muffins.
Bake at 350 F
