Directions

1. Measure out all your ingredients

   

2. Mix together spelt flour, flax, sesame seeds, yeast and salt.

   

3. Add in your warm water , honey and stir until combined.

   

4. Knead your dough until it is a firm ball. It should still be stretchy when you take a small piece of dough.

   

5. Let it rise in a warm area for about 1 hour or until double in size.

   

6. Turn dough out onto a floured surface and divide into half.

   

7. Roll each piece into a log shape. Tuck the ends under.

   

8. Brush with water and sprinkle with extra seeds. Place in a light greased loaf pan.

   

9. Cover and let rise for another hour.

   

10. Preheat oven to 400F and with a sharp knife, make 3 to 4 cuts sideways across the top of the loaf. Bake for 40 mins, or until internal temperature is at 190 F. Place loaf on a cool rack and let cool.

    

11. Slice and enjoy.
