Ingredients

2 c sprouted oat flour

½ c sugar
-
½ tsp salt
-
½ c butter cold
-
½c heavy cream
-
vanilla bean or 1 tsp vanilla extract

1 egg

1-1.5 c of fruit, chocolate chips. You can pick what you would like to mix into the coffee cake. We made it with fruit.
Directions
Mix together flour, sugar, salt, and baking powder together in a large bowl.
Grate in the cold butter.
Butter and flour mixture should look like this.
Add in heavy cream, egg and vanilla.
Mix until it looks like this.
Gently add in berries or mixings of your liking.
Put into a cake pan. Let it chill in fridge for 15 mins.
Heat oven to 400f and bake for 15-20 mins. Keep a eye on the cake you do not want to over bake the cake. Ever oven bakes different. A toothpick that comes out clean from center of the cake is a sign the cake is done.
You may sprinkle some course cane sugar on top when just out the oven.
Serve warm is best.
