This Danish braid bread is perfect for a spring weekend treat. Fresh and light tasting with simple ingredients. We loved this sweet treat and hope you also enjoy this recipe.
Ingredients

¼ warm water

2 ¼ tsp active yeast

½ c warm milk

1 egg
-
¼ c sugar
-
14 tbsp cold butter

1 ¼ c sprouted oat flour

1 ¼c organic all purpose flour
Cream Filling
-
8 oz cream cheese
-
⅓ c sugar
-
1 egg yolk
-
1 tsp vanilla
-
2/3 c fresh raspberries
Egg Wash

1 egg
-
2 tbsp milk
Icing
-
1 tbsp heavy cream
-
½ icing sugar
-
1 tsp vanilla
Directions
Mix together warm water, yeast, and 1 Tablespoon of sugar together in a bowl. Let rest until the yeast mixture starts to be bubbly. Make sure you use fresh yeast otherwise your pastry will not turn out as well. Add in the rest of the sugar, milk, egg, and salt.
Mix together.
Mix together flour and cold butter into food processor. Should look like this.
Add into the liquid mixture. Mix until just combined.
Now you are going to put down plastic wrap and put dough on the wrap. Put into the fridge and let it rest for 4 hours. You can also let it rest overnight.
Flour the surface and roll out the dough into a 15x8 in rectangle shape. Fold into a third, wrap and put back into the fridge. Let it rest for another 1 hour in the fridge.
Preheat the oven to 400 f. Well, the oven is preheating to make the cream cheese filling. Beat together cream cheese, sugar, egg and vanilla until smooth.
Line a baking pan sheet with parchment. Divide the dough into two halves. Roll out the dough. Put the cream cheese filling in the middle of the dough. Cut the side as shown.
Braid the dough. Put back into the fridge for 15 to 30 mins.
Bake for 18 mins or until lightly brown. Let it cool, then ice your Danish bread.
Icing on.
