This sprouted oat Christmas braid is made with our organic sprouted oat flour, giving it a naturally sweet flavor and a soft texture. Baked until golden it’s the kind of bread that pairs wonderful with butter or your favorite jam. A simple festive loaf that is a great for the holiday season.
Ingredients

2 large eggs

1 ½ cups luke warm water

¼ cup sugar
-
1 tbsp active dry yeast
-
½ cup nonfat dry milk
-
2 tsp salt
-
3 cups sprouted oat flour
-
2-3 cups reg flour
-
8 tbsp unsalted butter soften
-
zest of 1 lemon
-
½-1 cup golden raisens (optional)
-
1 large egg white for brushing on top of bread
-
almond slices optional
-
candied cherries optional
-
icing sugar to decorated on optional.
Directions
In a large bowl, mix together eggs, warm water, sugar, yeast and 3 cups of sprouted oat flour. Let rest for 15 minutes. Your yeast will do better when you let it rest for awhile.
Next add in salt, butter, lemon zest, raisins and 2 cups of reg all purpose flour.
Gentle stir together
Your dough should look like this.
Knead the dough either by hand or a dough hook. If kneading by hand lightly flour the surface and knead until dough is firm. If using a dough hook, you may need to add in more flour to keep the dough from sticking to much to the side of the bowl. Your dough should be soft and smooth when finished.
Cover your dough and let rise for about 1 hour. Gentle turn the dough over and let it rise again for 1 more hour.
Next shape the dough into 3 logs. You may need to let the dough rest a little while and then shape it into longer logs. You want the logs about 34 inches long.
Start braiding your dough.
Place the wreath on parchment paper on a baking sheet. Cover and let rise for 45 minutes .
Heat the oven to 400°F. Before you put your loaf into the oven, lightly brush it with egg white, sprinkle with sliced almonds.
Bake for 15 minutes and turn the oven temperature to 350°F . Bake for 25 minutes or until golden brown.
You may add candied cherries and icing sugar when the loaf in cooled down.
