Healthy cookies for your children. Great for taking to school!
1 cup organic quick oats
1/2 cup whole organic wheat flour
1/2 cup sprout flax
1/4 sprouted wheat flour
1 1/2teaspoonsbaking powder
1/2teaspoonground cinnamon
1/4teaspoonkosher salt
1large very ripe banana
2tablespoons unmelted coconut oil
1large egg
1/4 cup light brown sugar( you may also use coconut sugar)
1teaspoonpure vanilla extract (you can also use the vanilla bean )
3/4cupdark chocolate
Instructions :
Beat together oil, banana, and sugar. Add in dry ingredients. Fold in chocolate chips. Spoon 1 tbsp size each onto a cookie tray and chill in the fridge for 2 hours.
Preheat oven to 350 and bake for 10-15 minutes. Do not over bake, you want them to be soft and chewy.
