Back To School Cookies
Healthy cookies for your children. Great for taking to school!
  • 1 cup  organic quick oats
  • 1/2 cup whole  organic wheat flour
  • 1/2 cup sprout flax
  • 1/4 sprouted wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1 large very ripe banana 
  • 2 tablespoons unmelted coconut oil
  • 1 large egg 
  • 1/4 cup  light brown sugar( you may also use coconut sugar)
  • 1 teaspoon pure vanilla extract (you can also use the vanilla bean )
  • 3/4 cup dark chocolate

Instructions :

Beat together oil, banana, and sugar. Add in dry ingredients. Fold in chocolate chips. Spoon 1 tbsp size each onto a cookie tray and chill in the fridge for 2 hours. 

Preheat oven to 350 and bake for 10-15 minutes. Do not over bake, you want them to be soft and chewy.
