Directions

1. Preheat oven to 375°F. You will need a 9” square pan or 2 1/2-quart dish to make this cobbler

   

2. To make the topping of the cobbler . Mix together flour, baking powder, and salt

   

3. Mix together the eggs and sugar, add in the butter and milk. Butter is soft not melted. It is ok if there is pea size piece of butter when mixed together

   

4. Add in dry ingredients, stirring just to combine.

   

5. Pour into pan.

   

6. For the filling: use a med size pan and simmer together the liquor or juice and sugar for a few mins.

   

7. Add in fruit and stir to coat with the liquid. Pour the fruit over the batter.

   

8. Bake the for 30 minutes, until it's bubbling and the topping is a light golden brown. Serve warm with ice cream.
