Ingredients

1 c reg flour

½ sprouted spelt

¼ c sprouted flax

¼ c sprouted rye

1 ¼ c sugar

2 tsp baking soda

2 c grated carrots

3 tsp cinnamon

½ c raisins

½ c walnuts

½ c coconut
-
1 apple peeled and grated

3 eggs

1 c olive oil

2 tsp vanilla
Directions
All the ingredients you will need
Mix together flours, cinnamon and baking soda
Add in sugar.
Mix in oil, eggs and vanilla.
Add in carrots, walnuts, coconut
Mix together and spoon into muffin tin.
Bake at 350 for 15 mins. Keep close on muffins.
Let cool and enjoy.
